LET’S GO BANANAS for this Nutritious and Delicious, Gut friendly, Protein Rich, Banana Loaf:
60g Organic golden linseeds
120g organic sunflower seeds
80g Organic pumpkin seeds
40g Organic sesame seeds
40g organic chia seeds
2 tablespoons of baking powder (gluten free)
3 tablespoons organic Almond flour
3 tablespoons psyllium husk powder
2 tablespoons gellan gum (you can use other baking gums or vegan gelatine powder)
1 teaspoon Himalayan salt
1/2 teaspoon sea salt
1/2 teaspoon or a few grinds of black pepper
Around 400mls of warm water
4 small bananas or 3 medium ones
Preheat oven to 200-220 degrees celsius
Grind the dry seeds in small batches to get an even grind.
Put all the dry ingredients into the Thermomix or a Nutri-bullet style grinder.
Tip the ground up batches into a large mixing bowl.
Thoroughly mix the dry meal through with a dry balloon whisk to even out all the ingredients.
Have a small beaker of extra water to hand.
Have your spatula in your hand – make a well in the centre and pour in all the 400 mls water.
Quickly mix in the dry ingredients to the water as evenly and quickly as possible. If it looks like thick soup, you have enough water. If it starts to clog together in big dry lumps and dry pockets, quickly add more water.
Put all the mixture into the loaf tin and bake for 1 hour. After half an hour you can check with cocktail stick or toothpick that mixture is setting.
After it’s baked, allow to cool for 15 minutes in the loaf tin before taking it out and place on the rack to fully cool down (about 1/2 hour extra).
Keep in the fridge. Eat within 3-4 days if not freezing.
