Fermented Spiced Pickle

Looking for another way to include fermented foods in your daily diet?  Try this delicious pickle made with all natural ingredients and no additives or preservatives.  It’s so easy to make and perfect with meats, crackers or cheeses.


1 Granny smith apple finely chopped

1 Onion Finely chopped

2 sticks of celery chopped

large handful of raisins

10 dates chopped

80ml apple cider vinegar

1tsp ground ginger

1 tsp cloves and 1star anise (wrap in a little muslin bag so that they can be removed after cooking).

4 tbsp water kefir
1 mug of water



  • Add all the ingredients except the kefir to a large saucepan and bring to the boil. Simmer for around 1 hour until soft.
  • Spoon the mixture into glass jars with lids and add 2 tablespoons of water kefir to each jar.
  • Leave to ferment for 24 – 48 hours at room temperature before refrigerating
