Decadent Dark Chocolate and Fig Brownies – Flourless Delight

Who would have thought that brownies could be a health-friendly delight? Dark chocolate, the star of this recipe, brings more than just exquisite flavor. Packed with magnesium, a vital mineral for body functions, dark chocolate also offers prebiotic fiber that nourishes the friendly bacteria in your gut. It boasts beneficial antioxidants, including polyphenols and flavonoids, countering free radicals and promoting heart health by protecting arterial cell linings and reducing LDL cholesterol.

As part of the Sirtfood family, dark chocolate contains specific polyphenols that activate sirtuins, age-related proteins regulating key genes for metabolism, cell defense, inflammation, and longevity. Coconut oil, a healthy substitute for butter, is rich in lauric acid and metabolizes quickly in the liver. And for those avoiding eggs, chia seeds step in, offering omega-3 fatty acids, gluten-free and grain-free alternatives. Like dark chocolate, chia seeds also contribute magnesium and support digestive health, easing constipation, diarrhea, and inflammation.

Ingredients:

  • ¾ cup coconut oil
  • 1 teaspoon gluten-free vanilla extract
  • 3 tablespoons chia seeds & 6 tablespoons water
  • 1 cup rice syrup
  • 1 teaspoon lemon juice
  • 1 ½ cups dark cocoa powder
  • 1 cup dark chocolate
  • 1 teaspoon baking soda
  • 1 cup chopped figs

Instructions:

Preparing the Chia Seeds:

  • Combine 1 tablespoon chia seeds with 3 tablespoons water.
  • Grind the chia seeds in a food processor, spice grinder, or mortar & pestle.
  • Mix the water and ground chia seed meal in a small bowl. Allow it to sit until it achieves a gooey texture similar to raw egg yolk.

Brownies:

  • Preheat the oven to 180 degrees (gas mark 4) and grease a small baking dish.
  • In a medium-sized microwave-safe bowl, melt the chocolate and coconut oil until smooth.
  • In a large bowl, whisk together coconut oil, chocolate, vanilla extract, chia seeds, rice syrup, and lemon juice.
  • In a small bowl, mix cocoa and baking soda. Add the dry mixture to the wet and stir until combined.
  • Stir in the chopped figs and pour the mixture into the prepared baking dish.
  • Bake for 30 minutes, then allow it to cool before cutting into squares.

Serving 15 brownies, this recipe takes just 10 minutes to prep and 30 minutes to bake – a perfect blend of health-conscious and indulgent.
